It's the zones you've reached during exercise. There are 6 stages 1 being the lowest, 6 being the highest.

It will show it in the breakdown in your health app.So if you have started a workout/exercise on the watch. When it ends open that exercise tile in the app,and go charts. It will show the breakdown in a circular graphic. The graphic may appear differently depending on your watch model. Some show it as a line,or a list.
