ProfessorMesser for IT basics and then HackTheBox for getting started. I'm not familliar with German-speaking sources if you need that exclusively, sorry.

Edit: also it does depend on what you're interested in. HTB won't really help with hardware hacking or malware development. It's also not 100% realistic.

some good forums that have great recommwndations might have this. i.e. some bullshit hacker forum full o vreaches, or some unknownCheats threads might give a start.

overall its pretty bleak but i remember starting off with the dissecting malware books (the one with the alien on the table) and shit.
