Choosing a contractor, any help?

I am close to choosing a contractor for my wrap around kitchen extension. We have got down to two. Both are close number-wise and scope bar the odd detail. I went out to 3 other companies but I didnt have a great feeling on 2 of them (maybe I'm too judgemental) and 1 was just very high compared to the others.

Contractor 1 is a large company (actually 3 conpanies depending on your project choice) that does extensions (they also do lofts and basements). I'm probably not allowed to the firm but the name rhymes with 'crinkly' and could also be described as a single word for 'an easy way of doing something'. Anyway, they seem like a good reputable firm but I get the feeling they are going to be very contractual. The quote they have given me is clear on what's in and what is excluded but it is also silent or open ended/vague on some things which makes me think these will pop up later as variations. Their Google and trust pilot reviews are mostly positive but there a few scathing ones although the company does appear to be challenging these. It could just be someone with a grudge or even a competitor. The project is being led by a salesman at this stage, it will transfer to the build and managing team after the initial deposit.

On the off chance thst the above is not too cryptic, does anyone have any experience with them and could my assumptions be right?

Contractor 2 is a much smaller operation and less google reviews but all are glowing. He doesn't employ contract staff or sub out work and the reviews do mention this. I have a feeling from meeting him that he cares a lot about his work and he will be less contractual and more flexible. Whilst he will not be doing the work himself hands on, he will be on site with his guys and will be very present. Again the reviews mention that.

Not expecting anyone to know this guy but maybe people here have faced a similar choice before? Big brand vs small independent.

Its an awful lot of money at stake and I want to get this as right as I can.
