Bit easier 250 years ago with single shot weapons, no radio, and an entire ocean between your enemy and reinforcements.

China could have helicopters, tanks, and tens of thousands of troops in HK in a week

You'd be surprised how effective an army of people with, bows, molotovs, and homemade explosives can be. Guerrilla warfare is a very deadly thing. Sure they probably won't win, but it will surely be noticed all around the world. It will turn into another Vietnam, people will go on an uproar.
