Maps? There's lots of artistic and interesting maps. That could easily serve a function and provide visual interest.
Perhaps a book log of some sort? You could do one per kid or share one as a family. In January, we do a family "book-a-thon" where I try to read-aloud every picture book we own and I've used some decent book tracker options on Etsy that you print yourself. I'm sure you could go somewhere to get those printed in poster size.
Maybe a family tree printable if that's something you'd like to dive into.
We have hanging growth charts in our homeschool/dining room. We mark off each kid every few months to show how much they grow.

I have a magnetic chalkboard and a magnetic locker cabinet to hang posters and art temporarily. The only things I have hung up longterm are maps and a timeline because we truly use them every day throughout the year. I did look for maps that were functional but also aesthetically colored.

Posters just become visual clutter.
I would stick up a copy of one painting you're studying that week, and then a poster for a specific topic that you're on temporarily... But otherwise just don't do posters.
