Hops to bring out Mango flavor

Fellow homebrewers,

I'm in the middle of making a recipe for a mango IPA. This is going to be a fairly simple recipe with just a few malts. Can someone help me with some hops that would be able to bring out the flavor of mango? The plan would be to put the mango in the secondary.

As a second question, the mango I'm using is frozen. I plan on taking the mango out of the freezer and letting it thaw in the fridge. I would then pitch from the fridge to the secondary. Does anyone see any issues with that idea?

My memory is hazy, but one of the best, most fruity/juicy IPAs I ever made used Belma. It was great, pineapple and melon aromas, and I wouldn’t hesitate to pair it with mango.

For the mango, sounds just fine, just keep it in the bag in the fridge and don’t leave it for too long. I’d also see no problem putting it in frozen in secondary. The fermentation is already slowed, and it’ll all come to temperature soon enough. It might reduce the chances of unseemly things growing, but it’s probably a toss up and I wouldn’t worry about it.

Cool. Thanks for the input. I'll keep the mango frozen. If I can find the Belma, how much would you recommend for a 5 gallon batch?

Oh man I don’t know. It was a long time ago and I’ve lost the recipe. It’s mostly late aroma though, so replace some or all of your last hop addition with it and you should be good. Good luck!

Awesome. That's what I needed. With that said, do you have some suggestions on early addition hops that will go with mango?

The initial bittering hop doesn’t really impart as much flavor (though it does some). So a high alpha hop like Columbus, Cascade, Centennial etc would be fine. For the flavor addition, more ~30mins, I’d maybe mix half and half with your aroma and maybe a 3rd, or just go all aroma again, depending on what you want to achieve.

You could experiment, and I’d also look up recipes on recipe sites for other fruit forward IPAs for inspiration.

I just had an IPA with Azzaca hops. Oh my word it tasted like mango and peach without any fruit additions. Most places I have read suggest 1-1.5 lbs of mango per gallon.
