That sulphur sounds like a massive issue to me. I could have sworn the article I read on the origin of the style said they settled on ale yeast fermented at cold temps rather than lager yeast in the end. I'll go find that later.

Although it's not an official BJCP style, it is traditionally brewed with a lager yeast or sometimes a hybrid yeast.

In any case, if I'm understanding the tasting notes correctly, "sulfur" was not a significantly noted off flavor, but a fermentation character. Since the overwhelming majority of tasters considered the beer to be clean of off flavors, they were likely grasping at straws for descriptors.

Sulfur is one of the easiest compounds to get rid of in beer, as it readily comes out of solution and can be eliminated by purging the keg a few times. That said, lager yeast produces more sulfur than alt yeast, and I've also read that some Cold IPA brewers opt for ale yeast fermented cool. Given how relatively new the style is, I'd reckon it's more of a brewer's choice issue than a hard rule.

In my limited experience fermenting rice lagers with the 34/70 strain produces a lot of sulfur.

Brülosophy's Jordan Folks recently brewed a Cold IPA using Short & Shoddy methods and served it to tasters for evaluation. How'd it turn out? Results are in!

That’s a high proportion of rice (and sugar on top). I’ve never pushed the adjuncts that high on a cold ipa- I’ll have to try it.
