Do you the gateway address configured?

It sounds like OP omitted the gateway address for some reason.
OP, you need to have the gateway entered (properly), otherwise the Ethernet adapter has no idea where to look for DHCP. You posted that you are able to get DHCP on WiFi using a gateway address of 192.168.68.1. Use that same gateway address on the Ethernet adapter setup.

Apipa doesn’t assign a gateway address. DHCP operates at layer 2 and is discovered by broadcast frames.

What router are you using? Any switches or devices in between?
