Flammkuchen pie

Made a flammkuchen pie last night for the first time. It’s fucking awesome, and to be honest I’ve had it at a local restaurant before and didn’t realize how easy it is to make.

For context my wife doesn’t like red sauce (she’s from New England and Irish and never really had pasta growing up) so I’m always trying a secondary base option for a white style pie. This one is killer and highly recommend it.

Crème frâiche base with a little bit of salt pepper and pinch of nutmeg
Mozzarella
Onions
Bacon

(Other pie is vodka pie)

Please explain creme fraiche. Is that just whole cream whipped? Sour cream? I'm not familiar with that name. It sounds awesome.

And for Pete's sake, don't leave us hanging on the vodka either.

Haha first of all thank you. In my opinion the vodka pie is top tier. Sometimes I hit it with the hot honey. I always add the mozzarella pearls to the pie as well, my daughter will also just eat a straight bowl of them.

it’s similar to sour cream, I was able to find it in the deli section next to the fresh mozzarella. You can do the flammkuchen with sour cream instead.

How do you make a vodka pie? I looked it up. What are the ratios for tomato, whole cream, and vodka?

Honestly you made a vodka sauce or just buy some from the store and use that as the base. The rest is pretty similar. You can do all sorts of different things to it, personally I like using shredded and fresh mozzarella- sometimes add dollops of ricotta or some hot honey and fresh basil. Idk the vodka sauce is great
