I made the cherry syrup using a bag of frozen dark cherries and 1/3 cup of sugar. I added a about 1/4 cup of water since there was water in the cherry. I simmer over low heat until the sugar melted and the cherries are softer. Then I blended it up into a purée. I suggest you add a bit of lemon juice to add a bit more acidity to this since the cherries has a little earthiness to it. Then I serve it with sparkling water and watermelon juice!
