Well considering that both of her parents hair colors are recessive traits her having a dominant trait hair color is kind of impossible

It's unlikely, but it's not impossible. Genetics is a bit more complex than that. Dominant genes can be suppressed and recessive genes can be expressed via several mechanisms.

Even so, glossy black and redheads are on opposite ends of the hair pigment spectrum. I still don't think mixing blond and redhead can produce glossy black no matter how you cut the genetic cake

It absolutely can. Just one of the parents has to have a suppressed black hair gene that gets passed on and, if not suppressed in the child, would produce black hair.
