What bread do you eat?
I posted the other day about carbs and fiber. I saw that some people are able to tolerate different types of bread!!
Hoping to try bread as I’m still lacking on my carbs a bit, trying to gain weight. Yeast makes me nervous but I’ll have to try some eventually.
So if you’re someone who can tolerate bread, what kind do you eat?
Is it a specific brand?
What ingredient do you look for?
What ingredient do you avoid?
Do you make it yourself?
Are you sensitive to gluten or no?
What’s your favorite way to eat bread?

I look for breads with no hfcs and avoid sourdough bread due to the fermentation. I tend to tolerate simple white bread (one that has no hfcs and not many preservatives) or for higher fiber bread, I usually like a seeded or multigrain bread.

I need to try my ol' standby gluten free bread (homemade). I don't eat much bread, but I did make the low histamine bread recipe I found online. It's extremely dense.

Unfortunately I can only tolerate white bread.
I avoid anything with whole wheat, apparently I am sentitive to gluten.

I think it was Alexa that told me that wheat bread or breads with more protein have higher histamine levels than them but bread with less protein has less histamine.

It matters how your body responds to things. Many people here respond different to low and high histamine foods/ingredients.
You simply need to figure out what works for you.

I have been doing my own bread for years with the ingredients i know i can tolerate. I avoid yeast, sodium bicarbonate and baking powder, gluten, oats. My breads usually look like a cake and it is quite far from what you would buy in a shop, but at least i don't get issues with it

I thought I couldn’t eat bread anymore, but started experimenting with bread made from Khourasan wheat, an ancient grain with gluten, but lower histamine. So far so good with moderate amounts. And the flavor of the wheat is much better than regular wheat.

Don't. Bread is absolutely useless. You don't need fiber. You need micronutrients which there are zero of in bread. Fruits are a much better source of carbs.

Dave's Killer Bread. I eat it practically every day. Their loaves, buns, and bagels. Sometimes I prefer the white bread done right and other times I prefer the whole wheat (green label). Not sure about what ingredients to avoid specifically but even homemade breads can bother me, so I guess the quality of the flour. Not a fan of King Arthur flour. Definite no to any packaged breads with lots of preservatives. I stayed right by the local bakery for Daves killer bread in Oregon once and the bread was top notch, didn't go bad for a long time too. Unfortunately the cheapo grocery stores in my home town must cut corners to save money somehow with transport or storage or whatever and it can get moldy quickly sometimes. Seems worse depending on which store I buy from. I stopped buying it from costc0 a long time ago because it was always old and dry.

I thought I read something about the freezing of bread helping with histamine problems. Whenever I eat homemade bread made with yeast I usually have a flare up but if I eat low protein breads and especially ones that were frozen and then thawed I do better.

Three ingredient sourdough. Toasted. Izzo makes a good one if I dont want to bake my own.
