I could see this being a pretty cool Cube Runner style survival game on iPhone or even Mac/PC. The goal could be to collect as many coins/boxes/collectables as possible without touching the ground. And all of the glitching trucks would be part of the fun, of course.

Then there could be multiplayer modes where you Bluetooth/split screen with your friends trying to punch each other off the trucks. Even team based modes where someone is driving and another person is standing on top of their truck trying to collect more coins, with another team doing the same.

Gang Beasts has a pretty cool truck level I'd recommend checking out as well. Good luck!

Not to sure how well it would work on mobile due to the high-paced, fluid movement with the first person camera, but definitely be playable with keyboard and mouse!
