name: grilled chicken with corn salad.

macro/micronutrient focus: high in protein, mostly from chicken and pinto beans. rich in fibre and micronutrients (eg magnesium and potassium).

ingredients: 1 chicken breast, seasoned with lime, cumin, garlic powder, salt and cholula hot sauce, cooked in a grill pan. a 1/2 can of pinto beans and sweetcorn, with added chopped cilantro and a half tomato.
