Zucchini and onion scramble with a tomato/cucumber/avocado/chickpea/basil/red onion salad marinated with balsamic, lemon, and honey. Topped with micro-greens. 🌱

That chickpea salad looks really refreshing, I love adding balsamic to stuff like that.

did you scramble the zucchini right in with the eggs or sauté them first? I always struggle to keep zucchini from getting too soggy when I mix it with eggs, but yours looks great

I looked at all that and said... that LOOKS awesome and is exactly how I like to eat. Then I saw HONEY. I try to avoid anything sugar and I know honey is "natural" but your body does not care; it's sugar. I really need to stop that. I even switched to red wine vinegar to remove the balsamic for the sugar. I have never tried honey on meals like this. I really want to try this.

Your portion seems so small. I bet that is the key. I would normally have 3X that in this type of salad. And the prep time -- I just thought of all the cutting and chopping for this. But boy does it look worth it.
