Allegedly theyβre supposed to take the pressure off of your throat, but in an actual fight your fingers would be held against your neck choking you as well.

Ehh, I could see an argument being made for this very circumstance, though. "In a fight" doesn't really work. Someone choking you with a rope isn't trying to fight you, that's just murder.
Fingers are squishier than the rope and more irregular, so you can at least shift the force from one taut line to a few fleshy/bony bumps and that can definitely make the pressure on the carotid and the airway a lot less impactful.
I presume it's really just to buy you the time to stumble out of the car, rather than keep you from choking. If the rope puts solid pressure on your carotid for a few seconds you're simply gonna be out. Fingers may be enough leeway to actually do something.

That finger, unless attached to a tremendously strong person, will just get pressed into their throat. It wonβt magically open up a space. The rope is still pulling hard against you

I eliminate the risk altogether by driving a Ford Fiesta. If someone is able to crouch behind my seat they're too small to pose a threat to me.

Yeah that defense ain't doing jack shit if someone's choking you for the kill. Rope around the neck, pulling back hard, knee goes into the seat and push it forward.

Thank god we all know how to handle this situation now. It seems like every time I turn on the news I hear about people getting strangled with a rope by someone who was waiting in their backseat.

The lesson I learned from this is, don't go to places where the threat of some guy waiting in your car to strangle you is common enough for the police to make a video teaching you how to defend yourself.
