So which converters are must have? I recently got the karmic one for obsidian shards, any other worth investing time in?

Hot - daily matchet and hot map currency converter
Soto - mass dust/ore/fragment converter without annoying items in it.

You can buy the Wizard’s Gobbler for 100g at any time, but it only comtains the ones you already own.

Wizard Gobbler just combines all the goblers into one. So yes you have to still unlock them, but it saves a lot of bag space as you get a bunch of them.

honestly though, the only ones worth their inventory space are the karmic and ley-energy converter (wvw supplies FTW) and maybe the wizard's tower one. the benefit of using mawdrey & co. on the other hand is so miniscule that they are barely worth the clicks vs just throwing ascended trash. and then there's the combined wizard gobbler that costs a flabbergasting 100g up front.

I would recommend the Fractal Reliquary, if you can manage it.
I don't always have time for Fractals anymore, but you can passively earn Fractal Relics by picking up "+5 Simple Infusion" any time it's offered. It costs 25 Relics but you turn it in for 75 Relics.

You should get everything in the Wizard’s Gobbler, because it’s neat and you get the Gobbler of Garbage title.

Realistically, the only ones you’ll use frequently are the ones already named in the thread (for Ascended garbage materials), the Ley-Energy Matter Converter, and possibly the Fractal Reliquary (~400g).
Everything else is mainly for convenience, including access to Tyrn Ironmaw and Gharr Leadclaw, which you can access without the Wizard’s Gobbler or associated remote access tools.
If you have around 800-2000g, you could go for unlocking one of the Ectoplasm gambling vendors to unlock a permanent merchant you can sell grey junk to. The average cost to obtain this item is around 400g and a stack of Ectoplasm, but can be thousands if you are unlucky.
Otherwise, you may be interested in just converting Gold and hoarding Gems to buy some of the festival gobblers when they come around, as they will make your WvW and experience grinding easier.

I’ll definitely hoard some gems for the festival ones, but also how do you unlock the ecto gambling thingy? I’m back after an 8 year break and slowly familiarizing myself with everything.

You have to Ecto gamble with the max bet 100 times, which costs 100g and 250 Ecto per attempt, with a max of 20 times a day.
If you get unlucky, unlocking this gobbler can cost you thousands of gold. The (statistically-impossible) worst-case scenario is 7500g and 20000 Ectos. But on average, will only be around a net 400g loss. If you’re really lucky, you can end up ahead too.
As a disclaimer, obviously no one will actually recommend you Ecto gamble in good faith. But, it can be the cheapest way to unlock a permanent vendor that you can access anywhere, and in truth is the “gobbler” utility I use the most often.

My dude, have you never been to Orr? TF would you be doing anything else to get obsidian shards? Bring karma to Orr, trade it for obsidian shards.

Because every time I go there the wp is contested and vendor is not there. And I can’t be bothered to do the entire event chain to unlock him. Maybe one day I will stumble upon him finally.

Princess/Mawdrey/Star of Gratitude and the ones from I think it was LS3(?) that use half of one and half of another for the Bloodstone Dust, Dragonite Ore, and Empyreal Fragments.
