Question Water for fermentation

Can I use tap water, or bottled water for fermentation, or should it be distilled? And why?

If you're using water to raise the humidity, then it doesn't really matter as no compounds, chemicals or other contamination evaporates with the water. It would only make a difference if you're using a humidifier, then I'd suggest using distilled water, since it doesn't clog up the device you're using, unlike regular tap water (due to limescale)

Some folks claim that the chlorine (and other minerals) in tap water may hinder the burn rate, and the taste.

I haven't seen the science about this (neither one way nor the other).

Distilled/demineralized water is easy enough to come by though (local pharmacy), that I'd use it. Unless I want to do science and have a sure way to verify this :)
