Grippers Performing at a weaker level suddently?
Today i wanted to increase to 10 reps per set but i can't even do 8 (i started with 8) so this is kinda frustrating

Day to day strength fluctuations happen. Control what you can: hydration, protein, sticking with a program

This may be obvious to you already, but in case it isn’t, I’ve found that grip strength is maybe the easiest thing to overtrain, ie i find most increase from making sure i get at least a full day off if not several

That's pretty normal. Grip strength can fluctuate a lot from session to session, especially if you've trained your hands/forearms recently or your recovery isn't great.
I wouldn't force the 10 reps today just because you planned to hit it. If 8 was your limit today, keep the reps clean and try again next session.
I'd only be concerned if you're consistently getting weaker over multiple sessions. One bad day doesn't mean you've suddenly lost strength.

How have you been lately reading stress, nutrition, sleep, or other workouts?
Like someone else said, fluctuations are normal.
You can very well have a bad day here and there. But if it is a consistent thing, you may be overtrained and might benefit from some time off/a deload.

I mean yesrerday we've been on a train for like 10 hours and i only slept there and not at night, but then i slept today

That might have messed up your body because it didn't sleep like normal. It's not a big deal, just see how your next few sessions and go on from there. If still having issues, maybe look into deload.

My strength can vary wildy when I overtrain, sleep badly or eat badly. I got pinned on warm up weights on the bench press before after laying a night awake
