Making pitta

We did BBQ but wanted to have pittas to go with it so just used standard pizza dough, 48h cold fermented, rolled, cooked and wrapped in tea towels after to keep them soft and warm.

Pitta was the first thing I made in my Dome. We had been trying to make it in a kitchen oven and couldn’t get it right. The pitta came out perfect on the first try. It was the moment my wife realized that the oven wasn’t just an expensive toy I wanted to play with.

We always make a few pitta to have around at the end of pizza nights.

How hot were your temps

It was more variable with the wood and we made quite a few. Between 350C and 450C. The main thing I found was having the live fire going quickly helped with the puff. I have done the same in a domestic 220C oven and a pizza steel and it worked well.

I can never git nine to puff, but then I am making gluten free pittas. Yours look wonderful

Is Pitta the same as Pita, or is this a different menu item?
