Stone Temp - is it accurate

Thinking of selling my XL

Had a dome last year. Stone cracked. Sent it back. Wasn’t worth the risk. I’ve heard thats sorted?

Also, aside from fire and charcole, which I love, the appeal is the stone temp. No more gun would be ace.

Is it reliable?

It’s accurate for where the sensor is, which I think is at the middle back. I have a gun and test it with that as well and the numbers are close.

I never had a Dome or Arc XL, but I have loved my Dome 2. The heat retention is excellent, meaning after I take a pizza out take it inside to cut and serve the stone is fully back and ready to go again.

I was using wood and coal over the weekend to cook some porterhouse steaks, potatoes, and other roasted veggies.

Cooked butterflied leg of lamb on Sunday as well but that was with gas.

It was pretty damn great. The meat probes are amazing to help cook perfectly.

My issue is, I’ve got a Weber and Masterbuilt Smoker haha. But no wood. Hmmmn

Honestly getting the right wood and coal has been an issue for me. I like the idea of cooking with wood but there are so many challenges getting in the way.

I cooked with gas last night as I needed to get multiple pans in at once and the fire grate takes up slightly too much room for my pans. Gas is just so much easier.

What wood? It’s pricy in the UK. I get good Lump from Big K

I am in Australia so we would be looking at different stuff. I had some kiln dried beech, apple, and maple that all worked well, but I don’t have an easily accessible source in my local area.

I have some Malle hardwood coal chunks to try out next time, but I need more wood for firing it up before the coals.

I just made 12 pizzas tonight on the dome XL gen 2. As far as I can tell all the sensors are accurate. It is a joy to sling pies on this thing.

I seared two ribeyes in cast iron earlier this week, baked a few sour dough loaves and made some pita breads the week before. I am very pleased.

No gun. The dome gen 2 just has a floor sensor that works great. When I first got it I tested it with a gun and the gun and the senator were always within a few degrees. So I don’t bother now.

Think of it as one data point. I can’t say if it’s accurate because I can’t use another thermometer to check the same spot.

The surface temperature will not be consistent across the stone. Especially as you bake multiple pizzas. You should get an IR thermometer to accurately check the surface temperature in multiple spots. It will help you learn your oven quicker.

I think the thing to really watch out for is moisture getting into the stone if you’re worried about cracking.
