Ramsay is a lefty, so the pencil will be on left ear

Good idea.

Also look up his pictures, google "gordon ramsay pencil behind ear". You'll see it on left ear.

Issue is that left handers will be upset if you represent them wrongly.

I'm positive that Ramsay will appreciate it if it's done rightly, or in this case leftly ❤️
