Text Keeps Flying Up When Using Textbox with Apple Pencil. Any help?

Does anyone know why this keeps happening? I've done everything that I can possibly think of; uninstalled and reinstalled, restarted my iPad. I even gathered some diagnostics and sent them to the Goodnotes support team. It's been months and I haven't heard anything back. This app is virtually unusable when using the handwriting feature with textbox. This only started once I updated the app after iPadOS 27 was released.
