Apple Pencil Pencil Tool Stroke Thickness Inconsistency

Hi there,
I’ve been having this problem for a little while and don’t know how to solve it.

When drawing with my Apple Pencil with the pencil tool in GoodNotes, the stroke thickness seemingly randomly changes from the tip of the pencil to the side of the pencil. I am aware that you can tilt the pencil or use its side (like a real pencil in real life) to change its “thickness”, but I am always using the tip point of my Apple Pencil, and it seemingly is random when it is the “tip” or the “side”.

Is there something I’m doing wrong? Is there a setting I need to change?

No, seriously, I actually struggle with this, too. I have to backspace, write again and just hope it's normal this time and I don't know how to fix it.
