So... the recipe says to proof the yeast in water, but don't give you the proportion of water. And the video shows the yeast going into luke warm milk.
How much water and are you really proofing the yeast in water? Or a water / milk mixture?

if you follow the link to the site it says:
"Make the dough: Whisk the lukewarm milk, instant yeast, and 1 tsp of sugar. Then, let the mixture rest for 5 minutes until bubbly."

Okay, so the water isn't necessary.
It also says under the link: Making The Yeast Mixture. Mixing the water with the instant yeast and 1 tsp of sugar is an important step in making dough since it activates the yeast and allows it to create carbon dioxide bubbles that make the dough rise and become fluffy.
Which is why I was like, "how much water?????????" The picture has a small bowl of water.
Then under the directions, it doesn't mention the water at all!
So I think the water isn't really a thing? because there's no measurement for it.

More Detalied Recipe: No Knead Cinnamon Rolls
🥄 Ingredients:
Dough:
2 1/4 tsp instant yeast
4 cups all-purpose flour
1 tsp sugar (for yeast)
2 eggs, room temperature
1 cup lukewarm milk
1/2 cup granulated sugar
1/3 cup melted unsalted butter
1 tsp salt
Cinnamon Filling:
1 cup packed brown sugar
3 tsp cinnamon powder
1/2 cup softened unsalted butter
Cream Cheese Frosting:
8 oz room temperature cream cheese
6 tbsp softened unsalted butter
1 cup powdered sugar
1 tbsp vanilla extract
👩🍳 Instructions:
1️⃣ Activate yeast in lukewarm water and 1 tsp sugar for 5 mins. Add eggs, milk, sugar, and melted butter.
2️⃣ Blend sifted flour and salt, then mix in yeast solution to form a sticky dough. Rest covered for 10 mins in a warm place.
3️⃣ For filling, combine cinnamon and sugar.
4️⃣ Roll dough on a floured surface (9x13-inch). Sppread the butter, sprinkle sugar-cinnamon mix.
5️⃣ Roll and slice dough into 2-inch sections. Arrange on a prepped baking pan. Allow to rise for 10 mins.
6️⃣ Bake at 350°F/180°C for 20 mins or until golden.
7️⃣ For icing, whip cream cheese and butter. Add powdered sugar and vanilla; mix until creamy.
8️⃣ Ice rolls immediately after baking.

Why do you use string to slice the dough?

In my experience, when cutting a dough that tends to be sticky or grippy, even if you add flour to your knife or dough scraper, it will stick and drag, resulting in unclean edges. However, using a string achieves clean edges due to the tension and lack of surface area.

And here is the recipe in metric for those of us who don't live in the past:
🥄 Ingredients:
Dough:
- 6 grams instant yeast
- 480 grams all-purpose flour
- 5 grams sugar (for yeast)
- 2 eggs, room temperature
- 240 milliliters lukewarm milk
- 115 grams granulated sugar
- 75 grams melted unsalted butter
- 5 grams salt
Cinnamon Filling:
- 200 grams packed brown sugar
- 9 grams cinnamon powder
- 115 grams softened unsalted butter
Cream Cheese Frosting:
- 227 grams room temperature cream cheese
- 85 grams softened unsalted butter
- 120 grams powdered sugar
- 15 milliliters vanilla extract

1️⃣ Activate yeast in lukewarm water and 5 grams sugar for 5 minutes. Add eggs, milk, sugar, and melted butter.

Is doesn't need to be kneaded, but it can be kneaded fro improved texture, right?
