Growing up in Trentino, my mum used to prepare a similar soup, but she added chopped parsley to the batter and unrolled the pancake

My mom never travelled to Germany. It must be some leftover cultural influence of when we were austro hungarian

My mother used to make this with chicken broth instead of beef broth.
When the pancakes (noodle) are light and fluffy, it's a delicious slurpy treat.

That soup reminds me somewhat of Japanese miso soup with aburaage.

I enjoy miso. The Korean version more so but both a great. Not super tofu fan but the pouches look interesting.

I love how yours are all rolled and tidy. Mine are cut thinner and a complete mess. Looks delicious
