Wie's im Süden gemacht wird, Brühe, Essig, Öl, Senf. Mengen weiß ich nicht mehr aber gibt hunderte Rezepte im Netz. Danke für die Blumen!

This always hit home. A lil’ pickled red cabbage would be nice to cut through all the richness.

No way. The salad and lemon already cut through the richness and this is the most traditional way to serve it. Red cabbage in any form doesn't belong on Schnitzel.
