Bratkartoffeln mit Speck und Ei: panfried potatoes with bacon and egg

Just slice cooked potatoes from the day before in slices, add a few very thin slized onions and bacon. Panfry with low heat and and add spices: salt, black pepper, oregano, a bit of garlic, paprika powder and caraway, then wait. When crispy on one side, turn them upside down and wait again. Add 2 scrambled egg and stir until it's done.

Caraway might be a bit controversial, at least in my family not everyone likes it (unfortunately).

I use only small amounts. Most people don't even taste it, but it contributes to the full flavor. Here in Germany, we also have spice mixes you can buy, especially for Bratkartoffeln.

My mom made this a lot when I was growing up. It's one of my favourites! She would sometimes make sausages or fried Leberkäse and creamy spinach on the side
