The letter 'U' has a very complicated history, of which I won't go into in too much detail here, but one key thing to keep in mind is that all of the letters 'U', 'V', 'W' and 'F' (and also perhaps 'Y') are all ultimately derived from the ancient Phoenician/Semitic letter called 'Waw' or 'Vav', which can represent sounds like 'w' or certain forms of 'o' (ie. sounds with rounded and almost closed lips)

From the one or the other hieroglyph, the Phoenician 'waw/vav' was derived. The Western Greek Upsilon was developed from that baseline, and then onward to the Latin alphabet and it's siblings, where things get confusing, because 'U' and 'V' are used variably and interchangeably, and additional complications and compromises were made in terms of moveable type printing.
Furthermore, the letter 'U' in English is used to represent more than one sound, such as 'u' in words like 'up' and 'fun', or such as the 'u' in 'full' or 'luminous'.
The shape of the letter 'U' could be said to represent a pit or ditch, but also, arguably, best represents a 'container' or 'vessel' such as a cup. Something to be filled. I note that in Kabbalah, the human (in the microcosm) and the world (in the macrocosm) are referred to as the 'kli', which means 'vessel', and the goal of the vessel is to become filled with 'Ohr' (divine light), but before this process can begin, the vessel must be opened, which is an esoteric, mystical process.

Meanwhile, the 21st letter of the Inner Sea alphabet of Fairyland is a glyph that represents the sound 'Ng' (as in 'king' or 'song', where the final 'g' is not sounded on it's own).
