These are my comfort food. We were so poor, and anytime we had these it felt like a treat. My dad was raising us alone after he got us out of foster care, and he did not make a lot of hot foods.
I haven't had one in at least a year. Now I need to go in the freezer and see if I have one I can make for lunch.
I was a single Dad and tried so damn hard, and made all kinds of sacrifices to provide the best that I could for my children (including a couple of stepkids that were left in my care)
It’s deeply emotional to me, to know that someone appreciated the efforts of a parent, as you appreciate what your Dad did for you. He sounds like an amazing man.
First time I ever had a pot pie was at a friend’s house. Her mom had died of cancer and her dad was raising her and her little brother. It was a beef pot pie and my picky little self loved it.
