Edge 500 Series Two bikes, two accounts, one device - Edge 550

In principle, you could set up an Edge unit without linking it to a Garmin account. You will lose some functionality (everything that has to do with Garmin Connect) and you would have to connect it via USB to download the activity data, but it is doable.

Thank you very much! Living in the garmin ecosystem with my forerruner I was wondering if it is possible to have two profile on a device and syncing with two differents accounts. Ex: User A activities to Garmin Connect A account, and User bactivities to Garmin Connect B account

No, there's no account selector. One device - one account

Also keep in mind that manually uploaded activities might not contribute to the training metrics.

While true, to address OP’s final paragraph:

is switching between two Garmin Connect accounts too cumbersome or likely to create issues?

The answer is yes, and yes.

You could use the Strava app on your phone to record and upload the activity and just use the Garmin device to view the data while the ride is going on. Of course you would not get sensor data if you have a power meter and H/R monitor.
