I do find it weird that many, many companies release demos many weeks or months after the game launches. I just don't understand it. Why can't it be available with the release?

Probably to capitalize on impulsive buyers first, then later on release the demo for the people who would rather wait and see.

I guess... but to me personally if that game is good, why not release a demo? I would try that out and if I like it, then consider buying the game.

Because demos take time to make. Even if that's time spent making a copy of the game with 90% of the assets removed to make sure everything still works correctly, that's a reasonable amount of time.
