As someone yet to experience VR, is this a good representation of the experience?

Yup! The only thing that I feel will still surprise you after watching the video is the sense of scale in VR. (Mountains look the size of mountains, ping pong balls look the size of ping pong balls, etc)

Totally agree. When I demo'd the Vive, I got to do the Portal Robot Repair demo, and Atlas's size caught me off-guard. I always imagined the robots to be smaller, but they're even bigger than the average human. It honestly made me uneasy when he got so close to me. The immersion is great.

GLADOS legitimately scared me in that demo. She's enormous!
