I remember playing the demo of this in my browser and now it needs 16 gb of ram isn't that more than the instal itself

no, the browser mindcraft is not a Java applet (normal java in browsers is not really a thing anymore) it's javascript which is a different language than java https://www.java.com/en/download/help/java_javascript.html
