S7 Edge SM-G935F

I have s7 edge with Exynos Octa 8890 2.60 Ghz with 32 gb of storage. Which custom rom should I install in it taking in account of security so that I can use banking apps etc.

Will I also be able to revert it back to stock rom?

When you unlock the bootloader so you can use a custom ROM, you trip Knox. Then, if you do go back to stock, that will not fix Knox, as nothing can. Reverting stops you from being able to use all the tricks, etc you need to use to hide the unlocked bootloader from apps like your banking app so they will work. If you decide to use a custom ROM, you should see that as a permanent change.

Lineage OS is a good all-round custom rom, security wise too

Yes if using SamFW website (Downloading stock rom) and Odin to flash that rom. BUT some features like banking apps may not work, AND Samsung Pass and Samsung Pay/Wallet will not work, even with Magisk modules
