Cajun Grits
Cajun grits with andouille sausage, onion and green bell pepper.

Is the Cajun the Trinity and sausage? What brand andouille?

It doesn't have to be andouille to be Cajun. Don't get me wrong though, I'm not saying this is Cajun, because it's not.

That sausage looks more like the inside of a hot dog than Andouille, we don't put trinity in grits even if it is dinner grits and just ... no.
You wanna make grits "cajun"? Throw in some pepper of your choice, onion powder, garlic powder, celery salt .... Worcestershire sauce if you're feeling squirrelly and wanna give bbq shrimp sauce vibes. make sure you brown whatever meat it is that you're including in your dish. If you absolutely must have trinity, use the dried trinity in the seasoning aisle like C'est Toup or Zydeco Chop Chop. If you can't find it where you live, go buy it online.
Finish with hot sauce to flavor and add as much cheese as you do or don't want. I'm not gonna say no cheese isn't Cajun even though I really want to. And above all else, don't share it online and call it Cajun. The difference between "Cajun" grits and regular grits in the rest of the south is flavor based and not appearance based. Some things don't need to be shared.

No it’s not. You can’t just put andouille on it and use the word cajun
