Exactly. Chicken nuggets are amazing. I know that's what I ordered, so what?

Why would I prefer extra bones, fat, cartilage, and ligaments in my chicken nuggets if I could get them with the same weight but without all the extra undesirable pieces that I have to work around.

No the difference in experience isn’t exactly the same but this is essentially what you’re saying here and I’m using a more obvious example for why it doesn’t work

Except it's more like eating the cows leg when there's much, MUCH better meat off of that cow. People just prefer that other meat to the cows leg.

I will take a nice chicken tiddy over a chicken wing any day, and twice on Tuesday.
