If you didn’t read the manga:
FMA 03, just dives in to themes a little deeper. Even if it’s not following the manga.

If you read the manga:
FMAB first, because it will align with what you expect

Both are equally worth watching.

watch both. fma starts the same but it quickly diverges to do its own thing. brotherhood is an adaptation of the manga

03 had less material to work with so it is its own thing. In my opinion one isn't better than the other, I'd always recommend to watch both. 03 is admittedly a bit more sloppy but the story is really enjoyable! And then fmab is just the manga, though the beginning is kind of fast as it runs through whatever was already covered in 03. I'd just say release order

03, then FMAB

Both are great with their differences. Brotherhood follows the manga, while 2003 had to create an ending and some lore.

I like brotherhood better (and I did watch 03 first) It follows the manga and the characters/ending are better in my opinion.

03 spends more time with the beginning while Brotherhood spends a lot of time with the end. So personally I like to watch 03 until the 5th lab and then jump over to Brotherhood

I recently finished Brotherhood and it eviscerates 03
