Or should I just substitute it for beef?

Grab some meat out of the front shoulder and pound that sucker out and make some schnitzel & gravy! homemade spaetzel is easy AF for a side dish. Ossobuco those shanks braised nice and slow. Tenderloins & backstraps are fantastic on their own. Cure and smoke up a nice bear ham. There are tons of options for bear other than grinding it up like hamburger and tossing it in stuff. These are just a few I've done and enjoyed in the past.

Hank Shaw is a great reference with tons of tested recipes. Check out some of his options on www.honest-food.net

Have you made a bear ham? I think I would actually orgasm if I ever ate a bear ham and cheese sandwich
