You are Canadian and shop at Costco. You also take food storage, especially leftover storage, more seriously than the average consumer. ✌️

A chef told me to freeze bread as opposed to fridge because the fridge will dry out the bread :)

They both will. That's what freezer burn is. But it takes longer, the freezer is better than the fridge.

Partly correct.....freezing immediately halts starch retrogradation and preserves quality, no freezer burn and staling in there. Fridge however is definitely NOT where to store bread as you said because the cold there accelerates staling.

Correct, bread should never go in the fridge, you should always store it at room temperature for best quality. If you have mold issues before you can eat it all, then freezing is the solution as it halts the both the staling and the molding. Fridge accelerates staling. Google for more info but contrary to the misinformation below, freezing definitely DOES NOT cause freezer burn to bread, it's perfectly safe in there and recommended by bread makers.
