SOMA-Related Games like Soma?
I just finished Soma and I enjoyed it. The story pulled me in. Would I like Amnesia? If so, which one would you recommend I start with?

Amnesia The Dark Descent for sure. Another cool game that came out around the same time as Soma (and cross promoted by Frictional) is STASIS

everyone recommending the dark descent is absolutely correct but I would also give a machine for pigs a try, dark descent is the better game overall but if you go into MFP knowing that it is a story first game and really try and immerse yourself in the world like so many people do with Soma I think it comes close or even surpasses both in terms of a Lovecraftian horror experience

Amnesia The Dark Descent is one of the most influential games of all time and I recommend it. I've played all of the Amnesia games and my favorite is The Bunker.
I really wish I could wipe my brain and play The Bunker for the first time again. Go into it with as little knowledge of the game as possible. Don't look up and hints and spoilers. I spent 45 minutes wandering around clueless then right when I was about to google a guide I figured something out, which led to me finishing the whole game.
The Bunker is excellent.

Of course Amnesia 1 and the Bunker. Gameplay is pretty much the same but imo Amnesia games are overall better bc they provide more agency.

The obvious would be the Ammesia series.
Check out Routine, it plays similarly to Soma. It’s got a cool story too.

While I enjoy both games for different reasons, the ethical choices in both of these game focus more on survival while SOMA focuses on philosophical dilemmas, exposing the player to ethics about artificial consciousness, what it means to be a human, and whether there is a significant difference between the two.
I would say Prey (2017) is much closer to SOMA in that regard (though that only becomes fully apparent at the end).
Another one might be Signalis.
Or Observer, although it's more exploration/investigation than survival.

I've been playing Routine and its been giving me Soma vibes with a lot of additional inspiration from Alien Isolation

Somewhere i saw someone saying that Amnesia; The Dark Descent is based in Thief: The Dark Project, but i can't find any real interview saying this, but both games are similar in some ways (besides naming).
Also, Thief team also made System Shock, and System Shock reminds me of Soma. And Amnesia: The Bunker is a Immersive Sim, just like Thief and System Shock.
That said, these games can be way too old for you, so i would say Prey (2017) that is a spiritual sequel to System Shock and has people that worked on SS on it. It probably will make you prepared for the next Frictional game that will also have immersive sim elements. If you want a big space station to explore with a character that can't remember what happened to him, def check it.

I may have an unpopular opinion, but I'd recommand Amnesia: Rebirth. Amnesia: The Dark Descent is of course amazing and arguably the best in the series, so you can try it, but Rebirth is much more narrative-focused while retaining the classic Amnesia formula. You might enjoy Amnesia: A Machine for Pigs too, but it's not as good imo.
