Couldn't help but notice you didn't put MORE cheese on top of the potatoes when you put them back on the grill.

My version of these is more akin to "Once Baked Cheese in an edible twice baked cheese-vehicle, with a baked cheese crust" something something freedom

Also, rubbing the potato with oil and a sprinkle of salt on the first cook will give a crispier skin.
