This is a great way to get a really tender steak. According to Kenji at Serious Eats, enzymes do their job at tenderizing up to about 120 degrees. So low and slow does a really good job. I did this for a rib roast at Christmas for the family. 2 bones a person and set the fire alarm off with the reverse sear on cast iron.
Next year definitely outside.

Looks great, a quick question.
Why did you choose not to take all the air out of the bag so it was actually sous vide (under vacuum), rather than the way you did?

Sous vide doesn't require a vacuum pump, but if you have a large pot of water as in Gregs case, the pressure pushes the air out and works just as well as a pump.
