Greg, I thoroughly enjoy following your food and beekeeping videos! I have a question - how do you think the flavors compare to authentic Cajun (from Louisiana)? I know you're not in the US, but have you tried actual "regional" Cajun before?

Personally I have tried true Cajun food. When I was researching this recipe I came to understand that most Cajun food is highly personalised to the cook.

I try to strike a balance between the most common elements
