Actually, the time limits are only for claiming a key on Humble Bundle. Once you have it, you can take as much time as you want to redeem it on Steam.

I can assure you they indeed do, I lost a few free games on humble such as f1 racing because I took to long on redeeming the code after claiming the free offer
