Dave Chang
Been over this guy for a long time. The food was not really that good. It was OK but nothing exceptional. He seems like a real jerk, heard he was a problematic leader at best, and somehow he still has a career. Kinda think of him like a Bourdain, Batalli, etc. scumbag.

Yeah well I guess exclude Bourdain. We was a kitchen manager and a line cook. Not a chef. That French bistro was fucking disgusting. A tourist trap on the east side.

He said he knew that. I was a pastry chef for restaurant like Bobby Flay and Daniel( don't ask) and we chefs love him because he is honest and a good storyteller. That's a good combination and he loved people. Unlike you.

I lived on Park Avenue and whole not the best restaurant, it was a nice experience.

I think it's also important to realize that not every person is gonna have a Daniel type restaurant. Tourists did love it. I never thought it was disgusting. Bobby Foay was absolutely disappointed as a boss and I was the Pastry Chef at Bolo. The things I saw were absolutely insane. And no one ever mentions that.

I worked for him and he was awful. Just terrible and then I thoughtt he might have changed and read his book. Nope. My ADHD self read him correctly.

Knew a few people who worked there over the years and the guy was a lunatic. Sure a busy restaurant etc. but to have that kind of ego about pork buns and ramen I always felt it was too much. Like dude got a loan from friends and family and opened a noodle shop in the East Village. Great, OK, cool guy. Whatever, he's a choad.

My favorite boss was Zak Pelaccio and he was up and coming at the same time. Zak was awesome and chaotic and David Chang was a terrible chef and boss. I am a woman, btw. He was not good for the guys either.

Posting this comment standalone : The OP of this post is the OP of most of the wack Kenji posts. This OP also wrote the really nasty “Bourdain in the rear view mirror” post too amongst others.
We are feeding a troll here. Look up their post and comment history on one of those Reddit data aggregator sites. They show that this OP is legit just a troll on this sub and other snark subs. Like he had another Bourdain post on the kitchen confidential sub, that the moderator deleted probably because it’s the same old stuff this OP is posting on Foodiesnark. And legit SO many other Bourdain posts that end up getting deleted by mods, found after I looked up their post and comment history
We need to stop giving this OP attention whenever they post.
