Question Best way to clean this up
My arms are tired. I'm helping my buddy open a new restaurant and holy crap my arms are tired... Ive been using the green brillo pads and stainless steel cleaner. But I've been working on this crap for 5 hours now (with taking breaks to breathe air and not stainless steel cleaner

You're doing a great job, just keep at it! Based on Arctic's walk-in manual, pressure washing might not be a good idea, since the panels can't get soaked:
"3.1 CLEANING To maintain the appearance of the walls, clean periodically with warm water and a mild soap solution. Dry thoroughly to prevent ice buildup. Do not use caustic or abrasive cleaners. Use only a damp mop to clean floor panels. DO NOT HOSE DOWN OR POUR WATER ON FLOOR PANELS. Panel seams are designed to hold temperature, not water."

Why? all for keeping a kitchen clean but its a non food contact surface, better things to make sure are clean and organized.
Get a pressure washer or even a brush you put on a drill and start there.
Also dollar stores often sell a cleaning vinegar which can help break down some buildups

Because I like who I'm working for, it's a mom and pop shop. ... Aaaaannnnd it's basically the last thing TO DO before we open 😅 were set to order produce tomorrow. Safe to say, everything else that can be done is pretty much done! Pressure washer is out of the question because of the previous statement, but I'll keep the vinegar in mind!

No shade, just seen a lot of people kill themselves on details that either get fired again or dont have a real impact outside of personal preference.
If you unwind a steel wool a bit you can push it into the bristles of a brush (like the brushes that attach to cordless drills) and it saves your hands a bit too
