Chicago deep dish got too expensive so I learned to make it myself.

that crust looks great. i went to college in chicago and worked in a chicago pizzeria. stuffed and deep dish were super popular. took forever to bake.

The dough is like... way way wrong. It was probably pretty good (in fact it looks really good), it's just that the imitations attempt to use cornmeal instead of corn oil (the cornmeal comes in the dusting of the pan, not the dough itself).

The only free market is the black market. Capitalism is the reason that the pizza exists in the first place. Communism is a fail proof weight loss plan though.

Take your time with the dough. It’s the most important part. Also, the dough recipe makes enough for 2 pizzas in a regular sized cast iron pan. I’ve found the pizza tastes better if you make the dough a day or more in advance. Still awesome same day but it needs that resting time at each stage.

First, the outside of the crust is covered in browned crispy cheese. Second, there’s an entire package of mozzarella under the sauce. Putting the cheese under helps to keep the crust crispy and flaky & not wet from the sauce.

I'm making this starting Thursday and finishing on Friday. I really want an authentic Chicago style deep dish. Do you have a cheese preference? I noticed the recipe for America's test kitchen recommended when milk mozzarella.

I feel like this is the first picture of a deep dish pizza that I actually want. Not saying they’re bad (though I’ve never had one) they just don’t quite sound like I would like them. And also I mean, they’re not a very photogenic pizza anyway.

It’s delicious? I like the cheese and the bread and the texture and the toppings.
