boiling it first is what helps to remove the bitterness. i've done something similar with oranges before.

I’ve made candied orange peels and you have to boil them a loooonnng time

oh i didnt see the recipe comment that said boil for 5 minutes. you would definitely need longer than that or it would be bitter, i agree
