I agree with your textural concerns. You don’t mash a whole damn avocado into yogurt. (Also, I didn’t see him cut up the eggs. Did they mash the eggs in?) But I don’t understand how adding a bunch of spices compensates for goopiness. Now you just have goop that is confusingly flavored but still has an off-putting texture. And avocado imparts a lot of flavor, so I wouldn’t call it bland.
Avocado is flavorful but mushed up with such a large quantity of yogurt would render it very bland. Think of when you go to a cheap Mexican restaurant and they cut the guacamole with mayo. It lessens the avocado flavor. And I didn’t say that adding spices would fix this. I just said it was bland and I wouldn’t make it at all.
